Weekend is over. We had a blast, right: We ate what we had a craving for, we drank a little, we danced, we probably even worked out, but… We’re scaling a little more on monday, aren’t we? Now, is it really worth bothering about that? Didn’t we enjoy it? We had the choise, we could have eaten more healthy stuff, less carbs and trans fats, we could have drunken a little less and worked out a little harder. But heeey! It was weekend. The time to relax, let go of the stress and all the worries. In my opinion: Its totally ok to overdo on weekends. I do that to! 🙂
Well, but today is monday. Back to work, back to routine, back to stress and pressure.
The number on the scale doesn’t make it easier to start.Anyway, don’t worry about it.
I have a really nice, low calorie recipe that will satisfy you – for sure. It’s very easy to prepare, it’s prepared in a few minutes and it tastes great.
I’m talking about, what the title of this post already reveals: A light tomato casserole.
What you need (1person):
2 sp of Aceto Basamico
1 tsp of honey or 5-8 drops of liquid (no calorie) sweetener
100 – 150gr cottage cheese
salt, pepper, a little basil (additional)
How you do it:
Take a plate or a baking tin. Cut the tomatos into slices, pile them on the plate.
Mix the basamic vinegar and the honey or sweetener. Spread it onto the tomato slices.
Flavor it with salt and pepper. Add a little basil if you like that.
Then pile the cottage cheese over the tomatos.
If you’re in a hurry, place it for 2 minutes in the microwave.
If you have the time, put it into the oven (preheated, 200C), wait until the cheese is about to melt. Turn of the oven, let the tomato casserole heat up for another minute or two. Take it out, carefully. It might be hot.
